LION’S MANE Mushroom “Crab Cakes”

You'll Need…
• 1/2 pound Lions Mane Mushroom
• 3 cloves garlic
• Olive Oil
• Salt
• Pepper
• Dill
• Smoked paprika
• Cayenne
• 1 egg replacer
• 1 teaspoon soy sauce
• 1 teaspoon rice wine vinegar or white vinegar
• 1/2 teaspoon Molasses
• 2 tablespoons Vegan mayo
• Lemon
• Parsly
• 1/2 Green & red peppers chopped
• 2 Chopped Green onions
• 1/4 cup red onion chopped
• 1/2 teaspoon old bay
• 1/4 cup panko bread crumbs
• 1/2 cup bread crumbs

Directions
1. Pull Lions mane mushroom into crab like texture
2. add garlic and a touch of olive oil to lightly coat
3. Place on baking sheet and bake for 20 mins (check frequently)
4. in a separate bowl mix together
5. Egg replacer, soy sauce, vinegar, molasses, and mayo
6. mix
7. add parsley to taste, red /green onion, red/green peppers, and lions mane, old bay and squeeze half lemon juice
8. mix
9. add bread crumbs
10. mix
11. salt ,pepper,dill,smoked paprika, cayenne
12. form into balls
13. add olive oil to pan heated on medium heat
14. form crab mushroom mixture into balls then flatten into cakes
15. heat for 4-5 minutes on each side till golden
16. Serve with a side salad ( lettuce, tomato, corn, shredded carrots, crushed cashews ) topped with balsamic & micro greens-dip crab cakes in pink sauce ( vegan mayo, lemon, sriracha)
