Auntie’s Pink Chick’n & Waffle Sandwich

<For the “chick’n”>

  • 1-3 shiitake mushroom heads
  •  1 cup flour 
  • ½ cup vegetable broth 
  • 1 cup bread crumbs
  • 2 tablespoons of liquid smoke
  • Spices : basil, smoked paprika, black pepper, cumin, black truffle salt, nutritional yeast, sugar, garlic powder, onion powder, anise powder, Jamaican pimento powder.

<For the Pink Waffles >

  • 1 ¼ cup All purpose flour
  • 2 tsp baking powder 
  • ¼ tsp salt
  • 1 tbsp sugar
  • 1/4 cup non-dairy milk
  • 1 cup of dragon fruit puree
  • 1 tbsp of agave 
  • 2 tbsp coconut oil
  • 2 tsp Vanilla extract


Shiitake mushrooms are a great way to substitute meat. To turn it into fried chicken, you want to first marinate your mushrooms with liquid smoke as well as all your spices: basil, smoked paprika, black pepper, cumin, sugar, garlic powder, onion powder, anise powder, Jamaican pimento powder. Mix them all in a bowl and set aside for 4 mins while you create your batter. Mix your cup of flour in a bowl with the vegetable broth add garlic powder, black truffle salt, and nutritional yeast in a separate bowl make your dry mix add breadcrumbs and some flour. Dip you marinated mushrooms into your batter once coated throw into your dry mix then fried. Make sure your oil is hot before frying. Allow them to sit in oil till golden crispy them set aside to cool off. While you wait, create your pink waffles by adding all ingredients into a bowl. Mix well till the batter is pink and smooth. Pour into your waffle maker on medium-high heat for a crispy outside and a fluffy inside. To complete your sandwich coat your waffles with some dairy free sour cream, create a simple slaw using purple cabbage , white vinegar, vegan mayonnaise, and some salt & black pepper, add pickles to finalize your pink Chick’n & waffles pair with a side salad and enjoy.
